Pablo Maes Galindo is an accomplished hospitality executive with extensive experience in growth strategies, sales, and event management. Currently serving as the VP of Growth and Hospitality at Carrot Express since May 2024, Pablo leads strategic initiatives to enhance business growth and manages key partnerships while driving innovation. Prior experience includes serving as the Sr. Director of Travel Industry & Entertainment at NH Hotel Group, where responsibilities encompassed office operations and sales program development, and as the Director of International Sales at Posadas, overseeing international sales and client relations. Additional roles include Event Director at Great Performances and Director of Social Catering at InterContinental Miami, where Pablo focused on event planning and catering management. Pablo holds a Bachelor of Applied Science in Hospitality Management from Florida International University and a high school diploma from Colegio San Ignacio de Loyola in Caracas, Venezuela.

Our story began over 30 years ago when our founder; Mario Laufer decided to venture into the restaurant business. It was not an easy start and after many failed businesses in different industries, Mario decided to go after what he was really passionate about: cooking simple and healthy dishes but with a lot of taste. After a few hit and misses, Carrot Express was born on the inside of a gas station on Alton Road in South Beach. Suddenly amongst South Beach residents a buzz started to go around... have you tried the food at the gas station on Alton Rd.? It is amazing! Since then we began a never-ending journey to provide our community with delicious and healthy food. We pride ourselves on offering a creative and extensive menu based around natural, high quality ingredients combined with a fun, comfortable and relaxed environment.
