Erik Ruhof

Erik Ruhof is an experienced professional in supply chain management and consulting, currently serving as an SAP SCM Consultant at McCoy since September 2022. Previously, Erik worked as a System Dynamics Consultant at SD&Co from August 2021 to August 2022 and as a Customer Collaboration Specialist at PepsiCo, where responsibilities included processing customer orders and coordinating outbound logistics. Erik also gained valuable experience during an internship at PepsiCo Benelux, supporting demand planning and inventory management teams. Earlier roles include Team Lead at Albert Heijn, overseeing a team of grocery clerks, and a Support Associate in the Purchasing Department at VMG Versteeg Metaal Groep B.V. Erik holds a Master’s degree in Supply Chain Management and a Bachelor’s degree in International Business Administration from Tilburg University, along with an exchange semester at the University of Central Florida.
