Michael Ponce has extensive culinary experience, currently serving as a Japanese specialty chef at AMAN since November 2019 and as a Sous Chef at Coral Strand Smart Choice Hotel since October 2017. Previously, Michael held the position of Sous Chef specializing in sushi at Ghaya Grand Hotel since September 2014 and worked as a sushi chef at Sushi Ko Lebanon from January 2009 to September 2014. Additional experience includes catering roles at Diet Delights Restaurant and Bay Rock Rouche from August 2011 to August 2013 and September 2009 to August 2011, respectively. Michael earned an electronics technology degree from De La Salle University Dasmarinas Cavite (2001-2013) and a Bachelor of Science in Hotel, Motel, and Restaurant Management from the National College of Science and Technology (2004-2005).
