Mass coffee production generates enormous amounts of food waste: for every 1 kilogram of coffee, 2 kilograms of coffee cherries (cascara) are discarded. Since cascara was not legally recognized or commercially usable for a long time, it was simply thrown away – until now.

CAZ Cascara is a caffeinated refreshment made from sustainably sourced coffee cherries, which have been approved as a novel food in Switzerland since 2020. Cascara is rich in antioxidants, vitamins, minerals, and chlorogenic acid, with an earthy-sweet flavor and notes of honey and orange.

By upcycling cascara, food waste is reduced, sustainable farming is supported, and coffee producers gain an additional source of income.
