Raffaella, a Belluno native, after a life travelling around the world, settled in Trieste, the Italian Capital of Coffee.  

Trieste, colonized by the Roman empire in the 2nd century BC and part of it for over one millennium, fell under the barbarian invasions. Then, in 1382, adhered to the Habsburg house. In 1719, the Austrian empire declared its port a free port and commerce bloomed from all over the world. Soon Trieste became the epicentre of coffee importing in Europe and that is when coffee started to be roasted in town. It also became Europe’s first melting pot with people joining from all over the world giving this small city an incredible multicultural feel.  

While she fell in love with the city’s 300 years old tradition of importing, roasting and tasting coffee she realized that the revolution of specialty coffees and micro-roasting had only scratched the surface in the northeastern Italian city.  

In 2021 Raffaella founded Cocolo, a micro-roastery where the tradition of espresso meets the specialty coffee revolution. 

The founding values of Cocolo caffè are Artisanal, Sustainable, Italian and… Blunt! 
Artisanal as in handpicked coffee cherries, customized blends produced in small batches and personally roasted by Raffaella.  

Sustainability starts from sourcing coffee beans in places where the farmers are sustainably compensated for their work. It also means putting every effort to reuse, recycle and reduce every aspect of materials and energy utilized in the making or in the transport of the coffee and ends using only compostable packaging.  

Italian not only because we are Italian but because we love the Italian passion for quality and style and, most importantly, the Italian way of socializing. After all few things are more sociable than sharing a great cup of coffee.  

Lastly, we believe in being blunt. We speak our minds. We are opinionated. We respect everyone’s opinion but are not shy in letting you know what we think.
