EXCELLENCE FROM THE FINEST DURUM WHEATS OF SICILY

Pasta is a miracle of craftsmanship. Skillful gestures, repeated with passion, and those dies capable of creating a rough texture that pairs perfectly with any sauce, the proper drying time to preserve a pasta that remains firm and whole.

Today, just like in the past, Donna Itriya's pasta is made from 100% Sicilian wheat, a precious gift from this incredible land of ours. It is kneaded with pure water, extruded using traditional artisanal methods, and finally dried with the patience of those who have always made pasta, aided by the sea breeze. The drying process takes place in static cells, with long times and low temperatures to preserve the nutritional and organoleptic qualities of the product, following the tradition of artisanal production methods.

Donna Itriya brings this ancient knowledge back to life, blending it with the most advanced production technologies. The result is an entrepreneurial vision focused on the future, with the goal of promoting gastronomic, cultural, and historical excellence.

Every step of the production chain is monitored, controlled, and certified, from the fields to packaging, through all phases. And this is how the path of pasta is reborn, bringing to life the excellence from the finest grains of Sicily.
