Ruby Comia is an experienced Chef De Cuisine with a diverse background in fine dining and fusion cuisine. They began their culinary career as a Chef de Partie at Intercontinental Hotel DFC from 2007 to 2010 before moving on to Le Meredien Dubai, where Ruby served as a Junior Sous Chef from 2010 to 2016, specializing in Asian/French fusion. Ruby continued to hone their skills as a Sous Chef at La Ville Hotel & Suites City Walk Dubai between 2016 and 2021, and later became Chef De Cuisine at Yas Plaza Hotels from 2021 to 2022, overseeing the Blue Grill Fine Dining Steakhouse. Most recently, Ruby held the position of Chef De Cuisine at Emirates Flight Catering in 2025.
