Eric Bevins

Vice President Operations

Eric Bevins is an accomplished operations leader with extensive experience in the restaurant industry. Currently serving as Vice President of Operations at Forage Kitchen since 2025, Eric previously held the position of Director of Operations at Portillo's from 2016 to 2025, managing a $300M regional operations business unit. Prior to that, Eric was Director of Operations at Noodles & Company, overseeing a $120M business unit from 2007 to 2015. Eric's career began at Chipotle Mexican Grill as an Area Manager from 1997 to 2007 and included military service as a CounterIntelligence Special Agent in the US Army from 1989 to 1993. Eric holds a degree from Metropolitan State University of Denver, earned between 1993 and 1997.
