Danilo Paolella

Danilo Paolella is the Director of Food and Beverage at Hyatt, where they lead the F&B division. With diverse international experience across luxury hotels and resorts in the US, Middle East, South Asia, and Europe, Danilo built a strong foundation in pre-opening projects, P&L management, and large-scale F&B operations. They have held various positions, including Restaurant General Manager at NEOM and Food and Beverage Manager at Four Seasons Hotels and Resorts. Danilo is passionate about creating exceptional dining experiences and optimizing processes for efficiency while fostering high-performing teams. They hold multiple certifications, including WSET Level 2 in Wines and Spirits, and a diploma in Hospitality Administration/Management from Alison.
