Marc Marrone is a seasoned culinary professional with extensive experience in restaurant management and menu development. As the Chef Owner of Graffiti Bao since February 2019 and Italian Graffiti from November 2022 to March 2025, Marc has demonstrated expertise in creating innovative dining experiences. Previously serving as Corporate Chef for TAO Group from November 2011 to February 2019, responsibilities included menu engineering and cost control across multiple properties in Las Vegas. Additional roles include Executive Sous Chef at TAO and Chef De Cuisine at LAVO. Currently, Marc holds the position of Regional Vice President of Culinary Development for Hyatt, focusing on culinary concepts for the Lifestyle Group.
