Senior Lecturer - Sustainable Dairy Processing

Dr. Tom O’Callaghan is a Senior Lecturer in Sustainable Dairy Processing at the University College Cork, where they focus on research related to dairy chemistry and processing technologies. Tom graduated with a BSc in Food Science in 2014 and earned a PhD in Science in 2018, both from UCC. They previously served as a PhD Researcher at Teagasc, where their research examined the impact of cow feeding systems on milk quality, and later held the role of Principal Investigator with Food for Health Ireland. Additionally, Tom contributed as an Associate Editor for the International Journal of Dairy Technology between 2022 and 2023 and has been involved in various educational roles, including as a lecturer in Food Science and Technology.
