Ricardo Lopez is an accomplished academic and researcher currently serving as a Postdoctoral Researcher at Instituto Politécnico Nacional since December 2025. Prior experience includes a role as a Graduate Research Fellow at the University of Illinois Urbana-Champaign from August 2021 to December 2025, and serving as a Mentorship Program Coordinator and Food Science Research Assistant at the same institution from December 2017 to May 2021.
