Sucrose is the low-hanging fruit of sugars.

Easily extracted, cheap, sweet. Sure, it’s bad for you, but it’s the best option, right?

Wrong. There’s always been a better sugar up there, waiting for us. It’s rare. It does all the things we want sugar to do, and it doesn’t KILL PEOPLE.

It’s the high-hanging fruit, and, for a while our ladder wasn’t tall enough to reach. Those days are gone - Jaca is here. This isn’t another sorry substitute for sucrose.
