Céline Monnet

Céline Monnet is currently the R&D Director at Lesaffre International, where they lead the Breadmaking Research & Innovation Center of Excellence and manage a multidisciplinary team focused on various aspects of breadmaking. With a broad scientific background in biotechnology, the pharmaceutical, and food industries, they have directed numerous research projects, resulting in 11 patents and 17 scientific articles. Previously, Céline served as Head of Laboratory at LFB, where they managed a team and led research activities on proteins for therapeutic purposes. They hold a PhD in Protein Engineering from Université Paris Sud and multiple master's degrees in relevant fields.
