Bianca Sassi

Pastry Creative Chef

Bianca Sassi is currently the Pastry Creative Chef at Mangia, a position held since 2025. Previously, they owned Abobora Café from 2021 to 2022 and served as the Head Chef at Sensory Coffee Roasters from 2019 to 2021. Bianca has also worked as a Pastry Chef at Hotel Chelsea from 2023 to 2025 and as a Pastry Assistant at Virgin Voyages from 2022 to 2023. Their early culinary experience includes roles as a Line Cook at URBE CAFÉ and Tan Tan Noodle Bar, as well as a Pastry Chef at Restaurante Mensa. Bianca earned a degree in Culinary Arts and Related Services from Centro Universitário Barão de Mauá in 2015.
