Manzo is a single-estate Fassone beef house built around one principle: tenderness by biology, not by fat.

Our cattle are full-blood Piedmontese, raised and finished under complete estate control—from genetics and nutrition through harvest and allocation.

Fassone achieves extraordinary tenderness through muscle-fiber structure rather than marbling, producing a red meat that is ultra-lean, clean on the palate, and metabolically efficient.

The result is a protein trusted by chefs, athletes, and private households who value performance, digestion, and predictability over excess.

Manzo is not sold by the cut. We work by reservation—placing half and whole animals with a limited number of aligned clients each year.

Allocations may be stored, released, and shipped on demand to residences, chefs, or seasonal destinations worldwide.

We do not pursue partnerships. We place Manzo where standards already exist.
