Montaigne Nutrition is a French company based in Paris, founded in early 2025. We bring together medical science, food technology and digital technology to design rigorous nutritional solutions — from scientific research and clinical observation to the production line, from the molecule to the plate.

Three crafts, one discipline
– Science and medicine — understand, study, document.
– Product and food technology — design, formulate, industrialize.
– Technology and data — equip, structure, automate.

Who we are: three entrepreneurs with complementary expertise.
Alvyn Severien, President | FoodTech entrepreneur, strategy and financing of food innovation.
Thomas Felice, CEO | FoodTech entrepreneur, industrialization and food operations (Europe and the United States).
Anne-Flore Monnet, co-founder and Chief Scientific Officer | PhD AgroParisTech in food science, protein formulation and R\&D management, trained in data science and AI at Le Wagon.

What we do
– Products. Under the Longévité Paris brand, a two-phase nutritional method — nutritional ketosis induced by carbohydrate restriction (PSMF), then progressive reintroduction of foods — delivered through our store at 50 avenue de Wagram, our online platform, and a network of prescribing practitioners in the Paris region.
– Research and innovation. Our work focuses on protein nutrition, nutritional ketosis, practitioner training, clinical AI and metabolic modeling, with academic and clinical partners.
– Consulting. B2B engagements for food and healthcare players, drawing on our combined expertise: making science-based decisions, creating a nutritional product, optimizing industrial production, equipping medical practice.

We publish and document our work, alongside practitioners and researchers, as peers.
