Derek Wray

R&D Director

Derek Wray, PhD, possesses a Doctor of Philosophy in Food Processing from McGill University, where they specialized in Food Processing and gained extensive experience in various processing technologies and safety analysis techniques through participation in McGill’s Food Processing Group. They have held roles such as Laboratory Technician at Environment Canada and Lead Investigator for an NSERC Engage Industry Project, focusing on moisture sorption isotherms and shelf life testing for dried food products. Currently, Derek is the R&D Director at Nortera, overseeing innovative packaging processes and managing research projects, including the award-winning InFlavor initiative. Additionally, they have served as a Faculty Lecturer and Teaching Assistant at McGill University, contributing to undergraduate education in Chemistry and Food Toxins.
