Sofia Yasky is an experienced professional in food science and technology, currently serving as the R&D B2B LATAM Manager and Food Science and Technology Team Leader at NotCo since January 2021. Previously, Sofia held the position of Area Coordinator for Food and Nutrition at UADE, where coordination of practical activities in a yogurt and cheese pilot plant was conducted. Additional experience includes a master's project internship focused on dietary effects on intestinal microbiota at Università degli Studi di Napoli Federico II, as well as regulatory affairs work at Ÿnsect for insect-based food products.
