Sofie Rousseau is an experienced professional in the field of food technology, holding a Master's degree in Bioscience Engineering from KU Leuven. From October 2016 to September 2020, Sofie worked as a PhD researcher at KU Leuven, focusing on in vitro mineral bioaccessibility influenced by digestive barriers in plant-based foods, and gained expertise in mineral analysis and in vitro digestion.
