Derek Thomas is a versatile professional with extensive experience in both therapy and the culinary arts. Currently serving as a Transformational Therapist and Stress Management Consultant at Derek Thomas Therapy since October 2020, Derek also holds the title of Rapid Transformational Therapist and Certified Hypnotherapist. As President and CEO of Pizzakaya since June 2003, Derek leads a renowned pizza establishment in Tokyo, offering exceptional dining experiences and local delivery services. Additionally, Derek has a strong background in restaurant design and consulting as a freelancer since 2008, and previously held the position of Head of R&D - Executive Pastry Chef at Adama Breads, focusing on the development of pastries and sweets for major brands in Japan. Educational qualifications include a certification in Psychotherapy and Hypnosis from RTT Rapid Transformational Therapy by Marisa Peer and a degree in Baking and Pastry Arts from The Culinary Institute of America.

Step out of Japan and into Pizzakaya. Feels like being in America, but you don't need your passport! Our California gourmet pizza, American craft beers, and classic décor will be like a breath of fresh air for our local community and a home away from home for many of our customers. At Pizzakaya, we make our dough fresh, daily, and we do it the old-fashioned way. Our dough begins with a starter that needs 24 hours to rise, fall, and mature. Then, shortly before baking, we combine the aged starter with fresh dough. This two-step process produces a pizza that’s thick, yet light, and loaded with flavor. Crunchy on the outside, soft in the middle. Don’t forget our large salads with our famous vinaigrette, Garlic Marbles made from our pizza dough as well as a wide range of appetizers, sandwiches and a few other entrees for those who are in the mood for something different.
