Rooted in the Post Oak Savannah of Central Texas, Rancho Lolo is where land, story, and stewardship meet. We raise sheep, goats, and chickens on old pecan soil, restoring what has been handed down through care and time.

We work with the rhythm of the land, grazing, rotating, and regenerating so every pasture grows richer each season. Our animals live as they should: on open ground, under oak and sky.

Rancho Lolo is the source behind Esh: Fire Kitchen, where the meats, eggs, and stories from this land find their way to your table. Together we are building a local food system rooted in integrity, flavor, and renewal.

From land, to fire, to table. This is how we work.
Our work brings together:
Regenerative sheep, goat & poultry production.
Fire-cooked cuisine inspired by Sephardic and Texas food traditions.
Private ranch dinners under century-old pecan trees.
Immersive farm tours & seasonal community experiences.
Urban activations & luxury residential partnerships in Austin.
Story-driven hospitality grounded in land, ancestry & craft.
We believe real food and real community start with real land.
At Rancho Lolo, hospitality isn’t a concept, it’s earth, fire, animals, stories, and people around the table. We are building a new expression of modern hospitality rooted in heritage, sustainability, and a sense of place.

High-touch hospitality. Real roots. Slow fire. Deep culture.
From pasture to plate, from the ranch to the city.
The table is set.
