Restaurante Tortelli, an Italian restaurant, was established in Cali, Colombia in the year 2000 as a family-owned venture. Initially operating from home, Ximena Casasfranco and Maddalena Bozzetti, the founders of Tortelli, crafted and sold homemade pasta, which gained immense popularity. This led to the opening of their first restaurant. Presently, Tortelli has expanded to three locations across the city and employs a staff of 150 individuals. Tortelli specializes in stuffed pasta like tortelli and ravioli, but they also serve different house specialties like beef, pork, risotto, lasagna, and salads. The perk about this restaurant is that you can make the combinations you want by ordering half of some kind of pasta with another kind of pasta or with a specialty. Tortelli is renowned for its exquisite selection of stuffed pasta, including tortelli and ravioli. However, they also take pride in offering a diverse range of house specialties, such as beef, pork, risotto, lasagna, and salads. One of the unique features of this restaurant is the ability to create customized combinations. You have the flexibility to order half portions of one type of pasta and pair it with another kind of pasta or even a specialty dish, allowing for a truly personalized dining experience. 
Over the years, as Tortelli has experienced continuous growth, its management team has expanded accordingly. The team now comprises various key roles, including a CEO, a general manager, a marketing and client service coordinator, a business development manager, an executive chef, a production manager, and an operations coordinator. This diverse and dedicated management team ensures the smooth and efficient operation of the restaurant as it continues to thrive.
