Rossoblu is a family- and employee-owned, restaurant founded by husband-and-wife team Chef Steve Samson and Dina Samson. The concept bridges Steve’s Bolognese heritage with the diversity and spirit of Los Angeles, expressed through handmade pastas, wood-fired cooking, market-driven produce, and an in-house butchery and salumi program. 

Steve leads the culinary vision shaped by summers with his grandparents in Bologna. Dina oversees business strategy, marketing, finance, and community partnerships—ensuring Rossoblu operates not only as a restaurant but as a cultural and civic contributor to Downtown LA. 

Rossoblu’s ownership reflects the multicultural fabric of Los Angeles, with partners including Hans Luttmann, Emilia Mateo, and Gerson Rivas, each shaping operations, hospitality culture, and guest experience. Together, this partnership blends heritage, craft, and community and united by a shared commitment to hospitality and excellence.
