Kim Mclendon serves as the CEO of the Commission on Economic Opportunity since 2018. In addition to this leadership role, Kim has been the Nutrition Education Coordinator and Educator at Rustic Kitchen since April 2012, and also works as a Culinary Instructor at Luzerne County Community College starting in August 2012. Kim holds a degree in Nutrition and Dietetics from Marywood University and earned an Associate of Science in Culinary Arts and Education from Luzerne County Community College between 1998 and 2000.
