Simon Tolley Wines is a boutique, family-run producer in the cool-climate Adelaide Hills, founded by fifth-generation grape grower and viticulturist Simon Tolley. 

With deep roots in South Australia’s wine history and a Bachelor of Applied Science in Viticultural Science, Tolley draws on decades of vineyard experience across major regions to craft expressive, site-driven wines. His focus on estate-grown fruit from the Woodside property yields classic Adelaide Hills varietals — Sauvignon Blanc, Chardonnay, Pinot Noir and Shiraz — reflecting cool-climate precision and balance. 

The cellar door, set in a stylish converted shed with sweeping vineyard views, offers relaxed tastings and local produce pairings, making it a standout destination in the region. Simon’s 2024 Estate Range Sauvignon Blanc has won trophies at the Australian Cool Climate Wine Show and Royal Adelaide Wine Show, earning accolades for its vibrancy and perfume. A recent Adelaide Hills brandy made from smoke-tainted grapes highlights Tolley’s resilience and innovation following the 2019 bushfires.
