Beth Coonts

Beth Coonts is a Senior Counsel at J.R. Simplot Company, where they provide advice on employment and labor, litigation, and complex creditors' rights matters, overseeing the global records and information management team. They previously held the position of Counsel at the same company from 2018 to 2021. Prior to their role at J.R. Simplot, Beth was an Associate Attorney at Hawley Troxell Ennis & Hawley from 2008 to 2017, focusing on creditors' rights and bankruptcy litigation. Beth completed their education at the University of Idaho, earning a B.S. in Business and a Master’s in Accountancy, as well as a Juris Doctorate from the University of Idaho College of Law.
