About Sushi Shop
Redefining Sushi, Globally
Sushi Shop is a premium sushi brand that brings together Japanese tradition and modern culinary creativity. Founded in 1998 by two French entrepreneurs, we’ve grown into an international name, with nearly 200 locations across Europe and the Middle East, including a growing presence in the UK.
Our approach is simple: take the foundations of authentic sushi and reinterpret them with bold flavours, contemporary design, and a focus on quality at every touchpoint.

Crafted with Precision
Our menu combines classic Japanese techniques with a more modern, globally inspired perspective. From sashimi and nigiri to signature maki, tartares, and spring rolls, each dish is carefully prepared using fresh ingredients and presented with attention to detail.
Influenced by both Japanese craftsmanship and Californian creativity, our food is designed to feel premium yet accessible—whether you’re dining in, taking away, or ordering in.

Chef-Led Innovation
Collaboration has always been central to Sushi Shop. We’ve partnered with some of the world’s most respected chefs—including Joël Robuchon, Anne-Sophie Pic, Gregory Marchand, Mory Sacko, and Albert Adrià—to create limited-edition collections that bring a fine dining perspective to everyday sushi.
These partnerships allow us to continually evolve our menu while maintaining the quality and consistency our customers expect.
