Michel Couvreux has extensive experience in the restaurant and beverage industry, currently serving as Beverage Director for the Thomas Keller Restaurant Group since September 2009, overseeing operations for prominent establishments including Per Se and Surf Club, as well as managing the wine list for Regiis Ova Caviar Champagne Lounge. Prior roles include Beverage Director New York for Per Se and TAK Room, and Head Sommelier at Per Se. Previous experience includes a tenure as Sommelier at Cru and Head Sommelier at Le Bernardin, along with positions as Captain at Bouley and Head Sommelier and Maitre D at L'Arpège.
