Tonic Rooms was founded by Sean Kearney, alongside co-founders Martin Horsfield, Karen Goldingay, and John Ellis, with a shared vision: to create a destination that brings people together over great food, artisan drinks, and a passion for local produce.

After months of planning and a carefully managed refurbishment, Tonic Rooms opened its doors in August 2025 – with a warm welcome from hundreds of visitors during our opening weekend.
