Evelyn Rubio

Evelyn Rubio, MS, is a Bilingual Health Coach at Virta Health, serving since October 2020. Previously, Evelyn completed multiple dietetic internships in 2019, including experiences at Dietitians of Palm Valley, Jacksonville Veterans Affairs Outpatient Clinic, Elevated Nutrition, and UF Health, where responsibilities included providing diet education, medical nutrition therapy, and managing nutrition programs. Evelyn also worked as a Nutrition Educator at the Women Infants & Children Program from November 2017 to August 2018, focusing on community outreach and client assessments. Evelyn holds a Master's degree in Nutrition and Dietetics from the University of North Florida and a Bachelor's degree in the same field from the same institution.
