Carol Connell currently serves as the Interim Extension Specialist for Human Nutrition, Diet and Health at the Alabama Cooperative Extension System, a position held since October 2023. Prior to this role, Carol Connell enjoyed a long tenure at The University of Southern Mississippi, starting in March 1996 and concluding in November 2023, where Carol Connell held multiple academic positions, including Professor Emeritus of Nutrition, Professor and Associate Dean of the College of Education and Human Sciences, and Research Coordinator for the Delta Nutrition Intervention Research Initiative. Carol Connell earned a PhD in Nutrition and Food Systems from The University of Southern Mississippi, as well as a Master’s degree and a Bachelor of Science in Nutrition and Foods, both from Auburn University.
