Lauren Plunkett, RDN LD CDCES, is a health educator, public speaker, and author with extensive experience in diabetes care and nutrition. Currently leading LP Nutrition Consulting LLC since August 2017, Lauren specializes in personalized coaching and community workshops focusing on continuous glucose monitoring, plant-based nutrition, and exercise strategies for individuals with type 1 diabetes. As a coach for Mastering Diabetes Programs since October 2023, Lauren emphasizes exercise and insulin resistance reduction. In addition, Lauren serves as a spokesperson for the Association of Diabetes Care & Education Specialists and is an indoor cycling instructor at the JCC of the Greater St. Paul Area. Previously, Lauren held roles as a lead dietitian and diabetes education specialist at Included Health, where a national Medical Nutrition Therapy program was designed, and as a registered dietitian at Children's Hospitals and Clinics of Minnesota, developing programs for children with diabetes.
