Michaela's career began as a Customer Assistant at Boots, followed by various roles including intern at O'Keeffes Bakery and bar staff at Aviva Stadium. Academic credentials include a Master’s degree in Food Business from University College Cork and a Bachelor's degree in Business and English from Maynooth University.

When we opened our doors in 2011 our goal was to bring customers gluten and wheat free bread and bakery, right for their everyday needs and with quality and safety guaranteed. We believe that by making the most of the food we eat will help us lead healthier, longer lives and no one should be excluded from being able to do this. Our approach has always been to replace ‘less with more’ – more nutritious ingredients, more choice, and more taste. We challenge the norm, challenge the process, challenge the ingredients. We always aim to be innovative, thinking outside the box in everything we do. Eating is one of the great pleasures in life and it is at the centre of good times with friends and family.
