Simon focuses on post-acquisition strategy, financial reporting, and operational support to the investment portfolio.
Prior to joining Boyne, Simon worked at Restaurant Brands International, a 3G Capital portfolio company, where he held various roles, including Head of Accounting and Director of Finance for Popeyes brand, and more recently serving as the General Manager for the Popeyes US Central Division.
Simon previously worked at Mondelēz International, where he was part of the US finance team and he started his career at Ernst & Young in the Advisory practice.
Simon received his BS in Accounting and BA in Finance from Florida International University. He is also a Certified Public Accountant in Florida.
