Tony Grippo has a strong work history in the restaurant industry. Tony began their career at Hillstone Restaurant Group in 1994 as a General Manager and stayed with the company for 11 years. In 2006, they joined BrickTop's Restaurant as a General Manager and later moved on to become a Regional Manager in 2013. Finally, in 2019, they were promoted to the role of Chief Operating Officer at BrickTop's Restaurant.
