Allan Collier

Allan Collier is an accomplished professional in the hospitality sector with over two decades of experience. Currently serving as the Lead Assessor for Hospitality, End Point Assessment, and NFCS at Brockenhurst College since January 2000, Allan manages 140 apprentices, alongside a dedicated staff of six and additional part-time employees, focusing on diverse hospitality courses. Previously, Allan held the position of Head Chef Patissier at The Ritz Hotel from January 2001 to January 2011, overseeing all aspects of patisserie and boulangerie, including the production of renowned desserts such as wedding cakes, ice cream, and the esteemed Afternoon Tea. Allan holds a Diploma in Management Studies with a focus on HR, Finance, and Organisational Management from London Guildhall University, earned between 1998 and 2000. A specialist Patissier, Allan is passionate about working with pulled and blown sugar, as well as various facets of professional chocolate work.
