Nick Birkhofer

Nick Birkhofer is a seasoned professional in the beef industry with over 10 years of experience, beginning in finance and progressively transitioning to various commercial roles. They currently serve as the Senior Director of Beef Pricing at Cargill, leading a team that manages boxed beef pricing for the North American Fed and Cow business. Prior to this, Nick held several roles at Cargill, including Accounting Supervisor and Pricing Manager, and briefly worked as a Revenue Auditor at Penn National Gaming. They hold degrees in Finance and Accounting from the University of Northern Iowa.
