Founded in 1973 by a former employee of Monterey’s Little Mexico, Casa Olé took the traditional commissary-style Mexican restaurant and gave the concept a fresh twist. With daily preparation at each location, the chain quickly expanded to 34 locations throughout Texas and Louisiana, enjoying both a loyal following and some of the industry’s longest-tenured management. Casa Olé specializes in Tex-Mex dishes like enchiladas, fajitas, chimichangas and burritos and serves up customer favorites like Casa Olé’s famous green sauce and queso.
