Emerson Jacobson is an experienced professional with a strong background in legislative assistance, venture capital analysis, and conservation strategies. Currently serving as a Special Assistant at the U.S. House of Representatives and previously as a Legislative Intern at the United States Senate, Emerson has developed expertise in policy and communications. Prior experience includes roles as a Field Organizer for Katie Darling for U.S. Congress, a Venture Capital Analyst at Anthos Capital focusing on sectors such as Climate Tech and FinTech, and various internships at the U.S. Department of State and DigitalBridge. Emerson holds a degree from Tulane University and has also attended The London School of Economics and Political Science.

Ceres was founded in 2020 by a college student in New Orleans, Louisiana with the goal of creating a breakfast cereal that is sustainable for people and the planet. By 2022, Ceres had announced that they'd co-collaborated with their manufacturer to launch the 1st confirmed cereal on the North American market with 20g of plant protein and 0gsugar in every serving. The company is e-commerced focused, but recently announced a regional dive into retail markets in both Louisiana and California. Ceres opened a pre-order window on June 10th, 2022 at enjoyceres.com, and has announced that they will begin fulfilling their first orders at a newly minted distribution center in St. Bernard Parish, Louisiana. In the Summer of 2022, Ceres won 1st place at the Gulf South's largest single-event pitch competition by dollar-amount, Startup St. Bernard.
