Dillon arrived at Cleveland Avenue with over a decade of experience working in the hospitality industry. With the recent explosion of Chicago’s culinary scene, he has had the unique opportunity to open and operate a variety of different restaurant concepts. Dillon’s experience includes fine dining, sports/entertainment venues, craft brew/gastro pubs, and fast casuals. He is well versed in varying styles of full-service restaurant operations, menu development, staff training, and event coordination. Day to day, Dillon primarily focuses on CA’s consulting efforts in the beverage realm as well as supporting and developing beverage-related training and development for the internal portfolio brands.
Dillon has always had hospitality pumping through his veins. He was raised on the Southside of Chicago in the back of kitchens and restaurants; helping polish silverware, pound fresh pizza dough, or anything else that popped up. After attending DePaul University and working in various offices, he realized that working with food and beverage was his true calling and he returned to the fold.
