Gabriel Manzi's work experience includes various roles in different companies. Gabriel started their career in 2010 as an Administrative Assistant at Irmãos Cabral Comércio de Materiais para Construção, where they were responsible for customer service, document management, inventory control, and financial and operational tasks. Gabriel continued in this role until 2013. In 2014, they worked as an F&B Attendant at Pullman Hotels & Resorts, where they handled mise en place, customer service, and communication with the kitchen staff. In 2015, they returned to Irmãos Cabral Comércio de Materiais de Construção as an Administrative Assistant, performing similar responsibilities until 2017. From 2018 to 2019, they worked as an Order Taker at InterContinental Hotels Group. In 2021, they joined MSC Cruises as a Customer Service Agent until 2022. Currently, they hold the position of Onboarding Coach at CloudBeds.

Gabriel Manzi obtained their Bachelor's degree in Hotel Management from Universidade Anhembi Morumbi, which they attended from 2010 to 2013. In addition to their degree, they have also completed several certifications and courses to enhance their skills and knowledge. These include certifications such as Communication Foundations, Customer Service Foundations, Customer Service: Creating Customer Value, and Customer Service: Problem Solving and Troubleshooting, which they obtained from LinkedIn in February 2021. Gabriel also completed courses in Excel, such as Excel 2016: Tabelas Dinâmicas - Uma Visão Detalhada, Excel: Técnicas Avançadas de Formatação, and Gráficos no Excel: Uma Visão Aprofundada, which they obtained from LinkedIn and Udemy in January 2021. Furthermore, they acquired knowledge in finance and negotiation through certifications like Cálculo financeiro básico para administração financeira and Fundamentos de Administração Financeira, both obtained from Fundação Getulio Vargas in August 2020. Gabriel also completed a course in negotiation techniques from Senac São Paulo in July 2019, called Técnicas de Negociação.
