Emily Heying, PhD, RD, LD, is a registered dietitian and nutrition expert with extensive experience in academia and nutrition services. Currently, Emily serves as the Owner of The Nutrition Prof, LLC, offering individualized and group nutrition education, consulting, and guest speaking. As the Department Chair and Associate Professor of Nutrition at the College of Saint Benedict and Saint John's University since 2014, Emily teaches various nutrition courses, including an introductory course in nutrition science. In addition, Emily provides medical nutrition therapy through Foodsmart and has founded Elevate Dietitian Exam Prep, dedicated to preparing future dietitians for the RD Exam. Emily earned a PhD in Nutritional Sciences from the University of Wisconsin-Madison and has held various teaching and coaching positions, along with conducting significant research on pro-vitamin A biofortified maize.
