Salvatore Ortu is an experienced operations and general manager with a strong background in the restaurant industry. Since February 2018, Salvatore has held the position of Operations Manager at Daisy Green, also serving as Restaurant General Manager. Prior experience includes roles as General Manager at Chotto Matte from November 2016 to September 2017, FishWorks from December 2015 to November 2016, Ceviche Limited overseeing Ceviche Soho & Andina Shoreditch from October 2014 to October 2015, and General Manager at PRINCI UK LIMITED from October 2008 to May 2014. Salvatore holds a Diploma di Perito per il Turismo in Tourism and Travel Services Management from Istituto Tecnico per il Turismo "Carta&Meloni," completed between 1986 and 1991.
