Aylon Steinhart is the Founder and CEO of Eclipse Foods, a Y-Combinator backed startup that is changing the world through food. Eclipse Foods makes plant-based dairy products that are indistinguishable from conventional dairy products. Aylon and their team are behind some of the best-selling plant-based products in the world, such as JUST Mayo. Now, they are creating products that give you the amazing dairy flavor, texture, and functionality you love without the health, environmental, and welfare issues attached to traditional dairy.

Before Eclipse Foods, Aylon was a Senior Advisor at The Good Food Institute, where they worked for 3 years and 6 months. The Good Food Institute is a nonprofit organization that promotes plant-based and clean meat alternatives to conventional animal-based meat products.

Aylon has a passion for food and sustainability, and they are using their platform to make a difference in the world. Aylon is an advocate for plant-based foods and believes that they are the future of food.

Aylon Steinhart is a graduate of the University of California, Berkeley, and the Haas School of Business. Aylon participated in the Y Combinator program in 2019.
