The guiding rule at Ester Spirits is more flavour — and lots of it. Confidence and creativity make this maximalist approach a method, not just a mood.

Born from fermentation and fuelled by flavour, Ester Spirits was founded in 2020 by two seasoned Sydney hospo lifers, Corinna and Felix, who take a more is more approach to flavour and believe exceptional drinks should be refined, never restrained.

Ester Spirits quickly established a reputation for excellence, earning titles of Best in Show at the Australian Gin Awards (2025), World’s Best Navy Strength Gin at the World Gin Awards (2021), World’s Best Spiced Cane at the World Rum Awards (2024), and the highest-scoring Aperitif at the World Drink Awards (2025).

Now pouring at Icebergs Dining, Saint Peter, Margaret, Baba's Place, Seans, 10 William St, Bennelong, Bar Planet, Caterpillar Club, Bar Demo, and countless others.

Ester Spirits. Bold Spirits.
