Senior Scientist, Fermentation at Four Roses Distillery

Jacob Whitaker is a seasoned fermentation scientist with extensive experience in yeast management and process development. Currently serving as a Senior Scientist at Four Roses Distillery since February 2021, Jacob specializes in maintaining and propagating yeast and lactic cultures, supporting the distillery’s production schedule. Prior to this role, Jacob contributed to DSM as a Fermentation Pilot Plant Specialist, focusing on manufacturing support, cost reduction, and process development. Jacob's earlier experience at Evolva Group involved running over 4000 fermentations and characterizing numerous strains, while earlier roles at Allylix included strain engineering and laboratory support. Jacob holds a Bachelor of Science in Biology from Transylvania University.
