James Won

James Won is a culinary strategist and food culture conservationist, currently serving as an Adjunct Lecturer at Taylor's Culinary Institute and the Founder of METTA Foodination. As Chef Patron at Shin'Labo, they create a unique dining experience that blends Japanese and French culinary traditions with indigenous Malaysian ingredients. Additionally, James holds the title of Gaggenau Culinary Partner and operates as a Chef Ambassador. Honored as a Chevalier de l’Ordre du Mérite Agricole by the Ministry of Agriculture & Food of France, they embody the mantra: “Precision. Legacy. Roots.”
