Luca Martino is the Vice President Operations at Jackson's Food Company. Luca is also the Founder of Mahina Corals, a company initially established as an aquaculture venture but now transitioning into equipment manufacturing. With experience as a Site Director at UAS Laboratories, Luca coordinated site operations, quality control, and maintenance activities. Prior to that, as a Production Manager at DSM, Luca oversaw manufacturing departments like fermentation and packaging. Before that role, as a Plant Manager at Cargill, Luca managed a Soy Lecithin Production Facility. Throughout their career, Luca has held various roles such as Production Superintendent, Project Engineer, and Production Supervisor, demonstrating a strong background in operations management and process optimization. Luca holds a degree in Chemical Engineering from the University of Wisconsin-Madison.

Jackson’s is a leading manufacturer of Sweet Potato Kettle Chips cooked in premium, great tasting oils based in Muskego, Wisconsin. Our founders created the product after their son, Jackson, was diagnosed with a rare autoimmune disorder. Their top priority was to find ways to ease his symptoms. After much trial and error, they discovered that a high-fat, low-carb diet (with an emphasis on coconut oil and other ancestral fats) greatly improved both his health and quality of life. The whole family adopted this way of eating, but sure missed snack foods. So they set out to make their own! They began cooking thinly-sliced sweet potatoes low and slow in coconut oil on the stovetop. The results were delicious! The chips were too good not to share, so they started Jackson's! His legacy lives on through this company and the snacks he inspired.
