Nick Raitt is an experienced culinary professional with a diverse background in various leadership roles within the hospitality industry. Currently serving as Licensee, Executive Chef, and Venue Manager at Josef Chromy Wines since August 2016, Nick has also held positions as Head Chef at Haritos Hotels, La Scala on Jersey, and the Light Brigade Hotel. Previous roles include Executive Chef at Bull and Bear Sydney and Public Dining Room, as well as Head Chef at Steel Bar and Grill. Nick began the culinary journey as a Chef at Otto Ristorante and Chef de Partie at Forty One. Educationally, Nick attended Nelson College from 1994 to 1997.

Josef Chromy OAM (Order of Australia Medal) has owned and developed some of Tasmania's best-known premium wine brands including Jansz, Heemskerk, Tamar Ridge and Rochcombe (now Bay of Fires), and is recognized for his commitmentand contribution to quality food and wine in Tasmania. Josef Chromy Wines is one of few establishments in Tasmania that grow, makes and bottles its product on site and the 61hectare Vineyard is located in Tasmania's Tamar Valley . The viticultural team aim to produce the highest quality fruit that exhibits a balance of flavour, acidity, tannin and structure. We aim to create wines that are indicative of the individual season,variety and providence."
